2 cups zucchini, chopped
1 c. tomato, chopped
1/2 c. onion, chopped
1/3 c. grated Parmesan cheese
1 1/2 cups milk
3/4 c. Bisquick baking mix
3 eggs
1/2 tsp. salt
1/4 tsp. pepper

Preheat oven to 400F.
1. Grease 10-inch quiche dish or pie plate.
2. Sprinkle zuchinni, tomato, onion, and cheese in pie plate.
3. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater.
4. Pour into plate and bake until knife inserted in center comes out clean, about 30 minutes.
Cool 5 minutes.
