2 cups flour
2 cups sugar
1 tsp. cinnamon
1 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 c. oil
2 tsp. vanilla
3 eggs
2 cups zucchini, grated
1 c. raisins
1 1/2 c. nuts, chopped

Preheat oven 350F.
1. In a large mixing bowl combine flour, sugar, cinnamon, baking powder and soda, salt, oil, vanilla, and eggs. Beat at medium speed until well mixed.
2. Stir in zucchini, raisins, and nuts.
3. Add to greased and floured 9 x 13" pan. Bake for 50 minutes or until toothpick inserted comes out clean.
