Ingredients: 2 pound flank steak ¼ cup soy sauce 3 tablespoons honey 2 tablespoons cider vinegar 1½ teaspoons garlic powder 1½ teaspoons ground ginger ½ to ¾ cup salad oil 1 chopped green onion

Directions:Combine soy sauce, honey and vinegar. Add garlic powder and ginger. Strip excess fat, sinew or covering from meat and score (slash diagonally in both directions on both sides). Place meat and marinade in something non-corrosive or in a One Zip bag. Marinate for 4 or more hours (overnight is fine), turning occasionally. Remove and grill or broil (6 inches from broiler) 5 minutes on each side for medium rare. Do not overcook or it will be tough. Slice very thin on the diagonal against the grain. It is good hot with seasoned rice or noodles Alfredo or hot or cold on buns or French bread. |

Notes: A great Yankee recipe that made it down South via Nancy Huizinga. Nancy and Rich have been our friends since they were newlyweds living in an apartment between ours and Pat and Hugh's in Doc and Dear's (our parents) basement. That was in 1958-59. Rich was stationed at Fort Gordon and Nancy was teaching Special Ed. at North Augusta Elementary. We had sold our first house on Martintown Road and were in the process of building at 211 E. Martintown. Pat and Hugh were remodeling Mamie's house on West Avenue. Since then the Huizingas have returned to visit almost every April for Masters and we have made many trips to see them - Chicago, Iowa, Oswego, Gulf Shores, where ever they happen to be. In addition to being great friends, Nancy is a fantastic cook.
