"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1 head of lettuce
4 hard cooked eggs-sliced
1/2 c. green peppers-diced
1 sweet onion-medium sized-diced
1/2 c. sliced carrots
1 c. celery-diced
1 10 oz. pkg. frozen peas-uncooked
2 slices bacon-fried and diced
2 c. mayonnaise
2 tbsp. sugar
4 oz. of grated cheddar cheese

Tear the cleaned, crispy lettuce into small bite sized pieces and place into 9 x 13 in glass dish. Layer rest of the ingredients in order given, adding the sugar to the mayonnaise to make the "dressing". Spread the dressing on top of all the ingredients and top with cheddar cheese. Cover and refrigerate for 8-12 hours.

At serving time, garnish with additional bacon and parsley.
