2 tbsp butter, melted
1 med onion, chopped
1/2 cup carrots, grated
1/2 cup butter, melted
1/2 cup flour
1 qt half and half
1- 32oz chicken stock
1 med head broccoli florets, chopped
1/2 tsp nutmeg
16 oz cheddar cheese, grated
Salt and Pepper

In a small sauce pan, saute' onions and carrots in 2 tbsp butter until onions are translucent. Set aside. In a large dutch oven, add 1/2 cup melted butter and whisk in flour. Heat over med heat for 3-5 mins, stirring constantly. Add half and half and stir to combine. Stir in chicken stock. Simmer for 20-30 mins. Add broccoli, carrots, and onions. Cook over low heat for 20 mins, stirring often. Add cheese and nutmeg. Cook additional 15 mins or until thickened, stirring frequently. If needed, thin with half-n-half to desired consistency. Add salt and pepper to taste. Garnish with paprika and croutons.
