2 lbs. fish fillets, any kind
1 T. fresh lemon juice
Hot pepper sauce to taste, optional
1 tsp. minced fresh garlic
1/4 tsp. black pepper
1/4 tsp. salt
1/4 tsp. onion powder
1/2 cup crushed cornflakes or dry bread crumbs
1 T. cooking oil

Directions:

Heat oven to 475 degrees. Wipe fillets with lemon juice and pat dry with paper towel. In bowl, combine milk, pepper sauce and garlic. On plate, combine black pepper, salt, onion powder and crumbs. Dip fillets in milk and coat with crumb mixture, pressing crumbs firmly into the fillet. Spread 1 T. oil in shallow baking dish. Arrange fish in the dish. Bake for about 20 minutes on middle rack of oven. Fish will be crispy on the outside, flakey and moist on the inside.
