2 medium red peppers, sliced
1 small zucchini, sliced
1 small summer squash, sliced
1/4 cup onion, chopped
2-3 tomatoes, diced
1 can chicken broth
4 cups white rice
4 chicken breasts

Directions:
Directions:
Cook rice according to directions on box. Set aside. Put 2 tbsp. butter in skillet. Cut chicken in chunks and cook over medium high heat until no longer pink. Add chicken broth and vegetables. Stir then add rice.Cover and reduce heat. Simmer 20 minutes. Salt to taste.
