1/2 cups flour
1/2 cups milk, at room temperature
2 eggs, lightly beaten, at room temperature
Pinch of salt
1 tsp vanilla
1 tsp plus 2 tbsp sugar
Pinch of nutmeg
1/2 stick unsalted butter
Juice of 1/2 lemon

Directions:
Preheat oven to 325º. In mixing bowl, combine flour, milk, eggs, salt, vanilla, 1 tsp. sugar and nutmeg. Mix until still slightly lumpy and set aside. Melt butter in 12 inch cast iron or oven proof skillet in oven. When skillet is very hot, pour in batter and return to oven. Bake 15 to 20 minutes or until puffed and light golden. Remove from oven, sprinkle with remaining sugar and bake 5 minutes more. Squeeze lemon juice on top; dust with nutmeg. Cut into wedges and serve. Serves 6.
