2 tbs. butter
1 bunch green onion, finely chopped
2 tbsp. flour
1/2 cup heavy cream
1/4 cup good quality white wine, Chardonnay
1 tsp. salt
1 tsp ground cayenne
1/2 tsp garlic powder
1/4 tsp Tabasco Sauce
6 oz grated Sharp Cheddar Cheese
3 oz grated Swiss Cheese
1 lb. crawfish tails
Melba rounds or crackers

Directions:
Directions:
In a two quart microwave safe casserole, combine butter and onions. Cook in microwave on high for 3 minutes. Stir in cayenne, cream, wine, salt, cayenne, garlic powder and tabasco. Cook on high 1- 2 1/2 minutes until mixture is hot. Add cheeses, stirring until melted. Stir in crawfish and cook on high for 5 minutes. Serve immediately in a chafing dish. You can make the dip a day ahead. Keep in refrigerator. Gently rewarm.
