3 c wild rice
salt
4 blood oranges or navel oranges
3 T red wine vinegar
3 T sherry vinegar
1 t pepper
1/2 c olive oil
6 scallions - chopped
1 c dried cranberries
1 bunch fresh parsley - chopped (1/2 cup)

Directions:
Directions:
Cook the rice in a large pot until just tender, about 40 minutes. Drain. Meanwhile, cut away peel and pith from oranges, Holding over a bowl to catch the juice, remove orange segments and put in the bowl. Combine the vinegars in another bowl and whisk in olive oil. Mix the other ingredients together and lightly drizzle the dressing over and toss. Serve at room temperature
