1 c Self Rising Cornmeal
1/3 c finely chopped jalapeno
1 tsp. Salt
1 c grated cheddar cheese
1 tsp. Baking Powder
1/3 c Vegetable oil
3 Eggs beaten slightly
1 can 15 oz. Cream corn
1 med Onion; chopped
1 lb Crawfish tails (rinsed)
1 cup Grated Parmesan Cheese

Directions:
Directions:
In large mixing bowl combine cornmeal, salt and baking soda. Set aside. In mixing bowl put in eggs and onion, grated Parmesan cheese, jalapeno peppers, cheddar cheese, oil and corn. Pour into bowl containing cornmeal mixture and mix. Add crawfish tails and mix. Pour mixture into well greased black iron skillet. Bake in preheated oven at 375 degrees for 35 minutes.
