1# (2 cups) dry black beans
1 cup dry rice
8 cups water
1 bay leaf
1 medium onion, chopped
1 green pepper, chopped
1 Italian sausage or smoked sausage
1 tsp. oregano
4 tsp. cumin
1 tsp. salt
1 tsp. pepper
2 tbsp. lemon juice

Put all ingredients except rice and sausage in large crock pot.
Brown sausage (cut smoked sausage into bite sized pieces)
Add sausage to crock pot
Takes 3-4 hours until beans are tender
Cook rice and add to bean mixture when it is done.
Serve with cornbread
Optional: Sprinkle shredded mozzarella cheese on top, microwave until cheese melts and garnish with diced onion tops (green tops)
