Banana Bread Recipe

3/4 cup sugar
1/2 cup shortening
1 cup mashed RIPE bananas
2 eggs
4 tbsp. milk
1 tbsp. vinegar
(or use 5 tbsp. buttermilk for the milk and vinegar)
1 tsp. vanilla

1/2 tsp. salt
1 tsp. baking soda dissolved in 1/2 cup hot water
2 cups flour (can use wheat flour)
1/2 cup chopped nuts

Directions:
Directions:
Cream together sugar and shortening. Add bananas, eggs, milk and vinegar (or buttermilk.) Add vanilla, salt, soda dissolved in hot water. Add flour and nuts. Mix well.

Pour into greased and floured bread pan. Bake at 350º for 45 - 50 minutes.

This was a favorite that I got from a dear friend in North Carolina, named Teresa Hooker. It is very important to use very ripe (or over ripe!) bananas or the fruit will float to the top of the bread and be mushy. It is a great way to use up dead bananas!
