2 cups shredded cheddar cheese (finely shredded is best)
8 ounce bar cream cheese (or neufchatel)
1/2 cup sour cream (or reduced fat sour cream)
1 tbsp. dijon style mustard
1/4 tsp. onion powder
1/2 cup or so chopped pecans

Mix all ingredients except chopped pecans. Cover and refrigerate for several hours or over night. Shape into ball and roll in the chopped pecans. Makes one ball (about 2 1/3 cups.)

I make this every year for Christmas Eve. It is a favorite. It spreads easily and has a nice, not too strong flavor. Serve with crackers.
