1 1/2 cup sugar (use less for sweet apples)
3 eggs
1 cup oil
2 cups flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
4 cups sliced apples (about 4 apples)
powdered sugar for dusting

Directions:
Combine ingredients in a bowl, mixing by hand. (I’ve found combining everything except the apples mixes the best. Add the apples when the batter is mixed.) Bake at 350° in a tube pan for 1 – 1 1/4 hours. Sprinkle with powdered sugar.

Actually, this is my friend Pat's cake. It's quick, easy and a sure thing - even for the non-baker!!
