1/4 c. olive oil, 4 stalks celery, diced, 1 fennel bulb, diced, 1 large
bell pepper, diced, 1 large onion, diced, 1 T. salt, 5 cloves garlic,
chopped, 1 tsp. chili flakes, 1 tsp. Cayenne powder, 1 tsp. garlic
powder, 1 1/2 lbs. chicken thighs, cut bite size, 1 lb. smoked
sausage, cut in rounds, 1 lb. Louisiana sausage, cut in rounds, 4
1/2 c. chicken stock or water, 2 c. long grain rice, 1.5 lb. shrimp,
pealed and deveined, 1/2 c. chopped parsley

Directions:
Directions:
Saute` celery, fennel, bell pepper, onion, and salt in olive oil for 10
min. Add garlic, chili flakes, Cayenne, and garlic powder, simmer
5 min. Stir in chicken thighs and sausage, simmer for 10 min.
Add water or broth and bring to a boil. Stir in rice, bring to a boil
and turn down to medium to cook for 20 min. Stir rice and add
shrimp, stirring to mix in. Cook on medium for 5-10 min. until
shrimp are done. Garnish with Parsley. Serves 8-10
