6 - 8 medium-sized potatoes
salt and pepper to taste

1 medium onion, chopped (divided)
1 can cream of mushroom soup (divided)
2 c. shredded cheddar cheese (divided)

Directions:
Directions:

Boil potatoes in their jackets. Thinly slice potatoes when cool.

Spray 3-quart casserole dish with cooking spray. Place layer of potato slices in bottom of casserole dish. Salt and pepper potatoes to taste.

Sprinkle layer of onions over potatoes. Pour part of the can of cream of mushroom soup over onions and potatoes. Sprinkle with shredded cheddar cheese.

Repeat layers (potatoes,salt and pepper, onions, soup and cheese) ending with cheese on top.

Bake in 350º oven for 30-40 minutes or until onions rise to the top.


My Mom made this dish often when my sisters and brother and I were young.
