2 lb fresh squash
1 med onion
2 cloves garlic
2 tsp salt
2 T oil
2 c grated cheese
4 eggs
1 tsp pepper

Directions:
Directions:
Preheat oven to 350º. In a sauté pan add oil and let heat on med. high. Slice onions and squash, and mince garlic gloves. Add onions and squash to pan. Saute until veggies are soft and onions are translucent. Add garlic, salt, and pepper. Cook together for another ten minutes. Remove from heat and let cool. Scramble eggs. Set aside some of the cheese to sprinkle on top, add the rest to the veggies. Add eggs and bake 30 minutes, remove from oven and add remaining cheese and place under broiler until cheese is golden.
