Directions:
Directions:
Boil water in large pan, deep enough to mostly cover artichokes and add salt to taste and lemon wedge.
Cut off the stems just below the bulb and then cut a deep X into the stem toward the bulb. At the top of the bulb cut one to two inches off the top of the bulb and carefully spread out the larger leaves.
Place stem up in boiling water and use a lid or plate to hold chokes under water. Lower heat to simmer and cook for 30 minutes.
Remove from water and serve with Hollandaise sauce.
