1 large onion, chopped (1 cup)
½ c. celery with leaves, chopped
1 large clove garlic, crushed
2 Tbsp. butter
2 cans (16 oz. each) tomatoes, cut up
½ c. dry white wine
½ c. minced parsley
1 tsp. Salt
¼ tsp. each pepper and thyme
1 pkg. (1 lb.) frozen fish fillets, chunked

Options: May substitute 1 pkg. (12 oz.) frozen raw shrimp or 2 cans (7 oz. each) tuna for fish fillets.

In large saucepan sauté onion, celery and garlic in butter until tender. Sir in tomatoes, wine, parsley, salt, pepper and thyme. Cover and simmer 30 min.. Refrigerate or freeze, if desired. Or add fish and simmer 7 to 10 min..

Shrimp soup:
Substitute 1 pkg. (12 oz.) frozen raw shrimp. Add to boiling mixture, bring to boil again and remove from heat and let stand 1 min.

Tuna soup:
Substitute 2 cans (7 oz. each) tuna, drained. Add to boiling mixture just to heat.
