1/2 bunch green onions, chopped
1 garlic clove, minced
1/2 T olive oil
2 pounds red potatoes, peeled and cut into 1/4 inch pieces
3 bacon slices, precooked and crumbled
4 oz sour cream
3/4 cup Cheddar cheese, shredded- divided
3T butter
2 T milk
1/2 tsp salt
pinch pepper

Directions:

1. Preheat oven 350 degrees
2. Prepare baking dish with cooking spray
3. Saute onions and garlic until tender. Set aside.
4. Cook potatoes, covered, in boiling water to cover for 15-20 minutes or until tender. Drain and place in large bowl.
5. Add onions, garlic, bacon, sour cream, 1/2 cup of cheese, butter, milt, salt and pepper.
6. Mash with a potato masher until blended. Spoon into baking dish. Top with remaining cheese. Bake for 10 minutes or until cheese melts.
