3 large cooking onions
2 tbsp. granulated sugar
1/4c. butter (margarine doesn't work)
5c.water
3 tbsp of beef base
1 tbsp Worcestershire sauce
1/4 tsp. salt
1/2 tsp. pepper
French bread
1/2c of Swiss cheese
1/2c. mozzarella cheese
1/4c. Parmesan cheese
3 tsp. cooking sherry

Slice onions into rings then set aside. In large nonstick soup pot melt butter combine onions & sugar then saute in butter until onions are tender. continue to cook stirring often until onions have caramelized. Add water, beef stock and bring to a slow boil. Let boil on medium heat for 20 minutes. If water level gets low add more water 1/2 c. at a time. Add Worcestershire sauce, salt, pepper, & cooking sherry then cover and let boil for another 20 minuets. While waiting mix all three cheese types together & set aside. slice French bread into 1/2" slices. After soup has simmered divide into bowls add slice of bread on top and cover bread with cheese. Broil in oven at 500º for 5 minutes or until cheese is light brown.
