8 quarts tomatoes, peeled and ground(approximate 20#, 54 tomatoes)
3 C onions ground
1/2 - 1 C red peppers (can use Schillings chilies, small whole red ones 1-2 T)
3 - 3 1/2 C sugar
1 C salt, scant
1 - 1 1/2 quart cider vinegar

Directions:
Directions:
Put tomatoes, onions and peppers through grinder (blender). Measure into large kettle and add sugar, salt and vinegar.

Tie the following spices into cloth and drop into rest of mixture:

3 tsp cloves
3 tsp cinnamon
3 tsp ginger
3 tsp nutmeg

Boil 3 hours or more, if needed. Will thicken while cooking.

Put into clean pint canning jars and seal.
