3 lbs. stewing beef
salt and pepper to taste
1/2 cup butter
2 1/2 lbs. white onions cut in eights
l large can (12 oz.) tomato paste
1/3 cup red wine
2 T. wine vinegar
1 T. brown sugar
1 clove garlic (1/8 t. minced dried garlic)
1 bay leaf, 1 cinnamon stick, 1/2 tsp. whole cloves, 1/4 tsp. ground cumin, 2 T. currants

Directions:
Directions:
Melt butter in heavy kettle. Add meat, stirring to coat with butter. Put onions on top of meat. Mix remaining ingredients and spoon over onions. Cover tightly and simmer without stirring for 1 1/2 to 2 hours. When ready to serve, mix meat and onions thoroughly. Serve with rice or noodles.

This freezes well. It is almost better if made the day before. It is a great company dish as it can be kept warm indefinitely if your guests would rather drink than eat.
