1 ½ c. butter
1 c. powdered sugar
3 c. flour
1 8-oz. package cream cheese, softened
½ c. sugar
1 tsp. vanilla
1 tsp. lemon juice
1 c. pineapple juice or other fruit juice
2 tbsp. cornstarch
¾ c. sugar
Desired fruit: blueberries, sliced pineapple, kiwi, strawberries, bananas, grapes (about 3 cups total)

In a large mixing bowl, beat butter on medium speed with mixer until smooth. Beat in powdered sugar. Slowly beat in the flour till well combined.

Spread or pat the dough into the bottom a 12-inch pizza pan. Bake in a 325 degree oven for about 30 minutes or until sides are lightly browned. Cool completely.

In a small mixing bowl, beat together cream cheese,1/2 c. sugar, vanilla, and lemon juice until creamy. Spread over cooled crust.

In a small saucepan, combine juice, cornstarch and the remaining ¾ c. sugar. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute more. Remove from heat and cool slightly. While cooling, arrange fruit onto the pizza. Typically, I start with strawberries on the outside perimeter and then move my way in using all the pretty colors of the fruit as my guide for presentation.

Drizzle the cooled glaze over the fruit. Refrigerate until well chilled.
