1- Bag Yellow Bean Soak over night in bowl
1-Tbsp Vanilla extract
1 pk. Shredded Coconut
1-1/4 Sugar
1 dozon Eggs
Food Color (optional)

Directions:
Directions:
Drain Yellow Beans and place in large pot. Cook beans on med-high heat until beans are soft.
Drain Beans. Useing a food mill, add small amounts of cooked beans and mash the beans with food mill. dump onto cookie sheet and add 1 table spoon of vanilla an mix well. Let Cool to room Temperature. Scoop out small portions into hands and roll into golf ball size balls and place onto another cookie sheet.
Mean while seperate a dozen egg. place egg yolk in one bowl and egg whites in another bowl.
Gently stir egg yolks untill mixted well.
and set aside.
In small pot, place 1- 1/2 cups sugar combined with 1/4 cup of water. Melt sugar mixture until it becomes like a thick syrup texture.
Take Yellow bean balls one at a time and dip into sugar mixture, then egg yolks then into sugar mixture then place on place so the yellow bean balls done become soggy.Onece all yellow beans balls are done sprinkle with coconut flakes ( can mix food coloring to coconut before you sprinkle.)
place into paper cupcake cups and chill until ready to serve. ©

I remember my mother would hand shred the coconut when she made this dessert. It's not too sweet and brings happy memories to me.
