1-13.5 Coconut milk
Red Potatoes
5- Bay leaves
2 -3 tsps Yellow Curry mild, not hot
3 -Kaffer Leaves
2-3 Tbsps. Sugar
1-2 Tbsps. Fish Sauce( 3 crabs brand)

Cut Up Chicken to bite size pieces, Place in 5 Quart Dutch Oven. Add Coconut Milk, Curry Powder, Kaffer Leaves, Bay Leaves, Fish Sauce, Sugar,and Salt. Use plastic Gloves to mix ingrediance together well. On high heat, Bring Curry mixture to a boil, Stir often, carefull not to burn the mixture. When mixture becomes aromic, reduce heat to a mid-low, and continue to simmer. Add enough water to mixture to cover chicken about 1 inch about the chicken mixture leavel. Simmer for about 30 minutes.
Mean time, peel red potatoes and cut in to cube pieces.Add potatoes to the curry mixture, and stir in potatoes so they go to the botton of pot, That way the potatoes will cook well faster. Keep stirring Curry with long wooden spoon to prevent the curry from burning or the potatoes from sticking. Tasted curry to see if needs more fish sauce, salt or sugar.
Serve With Sliced Hot French Bread Or Bagettes.©
