1/2 cup Lemon grass- pureeed ( found in asian markets)
1 -13.5 oz. can Coconut milk
Chicken Breast
Soba Nodles
Celantro
Bean sprouts
Green Cabbage
Roasted Peanuts - Ground

Directions:
Directions:
In large pot boil soba nodles for 1 minutes,Drain and set aside for later use.
In Large pot, boil chicken for 30 minut. Save chicken broth to use later. Take chicken, aside to cool and shred chicken and place in blender with 1/4 to 1/2 cup of chicken broth and puree until thick like soup.Place pureed chicken in Large pot and add lemon grass, sugar, salt, coconut milk and Lime juice. Boil on med-high heat for another 30 minutes.Reduce heat to low and simmer until ready to serve.
Place in serving bowls, Shredded cabbage, Bean Sprouts, Soba Noodles, and Chicken mixture. Top with Celantro and ground peanuts. ©
