2 tbsp. yeast
2 c. very warm water
1 tbsp. salt
5 or 6 c. flour

Dissolve the yeast and salt in the water (as hot as you can stand to keep your finger in for 10 seconds). Blend in enough flour to make a soft dough. If you have a stand mixer (Kitchenaid), use the dough hook and knead for 4-5 minutes, adding flour if the ball sticks to the sides. If not, turn the dough onto a floured counter top and knead 6-10 minutes, adding flour to keep from sticking, until the dough is smooth and elastic. Place the dough in an oiled bowl, turning the dough to coat with oil. Let rise until doubled.

Punch the dough down and divide into three balls. Roll each ball out to fit round pizza pans or rectangular pans with low sides. Cookie sheets are fine. Place in oiled cookie sheets. You can sprinkle the sheets with corn meal (maize meal) to add crispness to the crust. Let the crusts rise in a draft-free place.

Meanwhile, preheat the oven to very hot-- 400º to 500º F. Top the pizza with a few tbsp. of Pizza Sauce (see recipe) and mozzarella cheese. You can also add chopped green and red peppers, onions, garlic, or meat. Bake the pizzas in the hot oven 15-20 minutes, until the crusts are turning light brown at the edges and the cheese is beginning to brown. Let cool a few minutes before slicing.
