For topping:
6 T butter, cut into 1/2 in. chunks
3/4 c brown sugar, packed
2/3 c flour
1/2 c rolled oats (old fashioned oats are best)
1/2 c chopped nuts (optional)
1/4 t salt
1/2 t grated nutmeg
1 t ground cinnamon (optional).

For filling:
2 1/2 lb peeled, cored and thinly sliced apples
1 t ground cinnamon
1 t grated lemon zest
1 T fresh lemon juice
2 T sugar.

For topping: Using your fingers, work the butter with the rest of the ingredients until each piece is coated and you have a coarse, crumbly mixture.
For filling: Toss ingredients together.
For assembly and baking: Preheat oven to 375ºF. Butter a 2 quart, 2-inch high baking dish or gratin dish. Arrange fruit in the dish and cover with topping. Set the dish on a sheet pan to catch drips. Bake until juices from fruit are bubbling and topping is brown, about 1 hour and 10 minutes.

Crisp topping is fun to make with children helping. You can make the crisp topping in advance and store it in the freezer until you're ready to bake. This recipe can be adapted for use with blueberries, peaches, blackberries, rhubarb, plums, pears, raspberries or a combination.
