2-3 chicken breasts, cooked and diced
4 c. water
2 c. onions and green peppers, diced
1 pkg. summer sausage, chopped
1 tsp. garlic
2 cans of tomatoes
2 c. uncooked rice
3 c. chicken broth
1 tsp. thyme
2 tsp. parsley
½ tsp. chili powder
2 tsp. salt

Directions:

Mix all ingredients together and place in a large baking dish. Cover with foil and bake at 350º for 1 hour.
