Orzo with Shrimp and Broccoli Recipe

8 oz. orzo
2 c. broccoli florets
2 tbsp. extra virgin olive oil
1 large onion, finally chopped
2-3 cloves garlic, minced
2 lbs. medium shrimp, peeled and cleaned
1 lemon, zested and juiced
1/2 tsp. red pepper flakes, optional
1/2 c. chicken stock
3/4 c. shredded Parmigiano cheese plus extra for topping
salt and pepper to taste

Heat a large pot of water to boiling; add orzo. When orzo has
about two minutes remaining to cook, add broccoli to the
same pot with the orzo and cook for remaining two minutes.
Drain broccoli and pasta together.
While the pasta and broccoli are cooking, heat olive oil in a
large skillet over medium high heat. Add onion and sautee until
soft, then add garlic and cook one minute longer. Add shrimp
to pan and cook, turning once, until cooked through, about
two to four minutes. Add lemon juice, zest, pepper flakes, and
stock, stirring to lift any browned bits from the pan. Add
broccoli and orzo, and cook for about one minute for the
flavors to meld.
Remove from the heat and toss with Parmigiano cheese; add
salt and pepper to taste. Serve immediately with extra cheese
for topping.

This recipe is surprisingly easy and very good. Orzo is a pasta
that resembles rice in size and texture.
