2 c. rolled oats
2 c. buttermilk
2 eggs
1/4 c. butter, melted
1/2 c. flour
2 tbsp. sugar
1 tsp. baking powder
1 t. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. salt

Directions:
Directions:
Combine oats and buttermilk. Refrigerate overnight. Add two eggs and melted and cooled butter. Mix in a separate bowl: flour, sugar, baking powder, baking soda, cinnamon and salt. Stir flour mixture into oat mixture until moist. Preheat griddle and then dollop about 1/4 c. of batter for each pancake.

This comes together very quickly in the morning if you mix the flour mixture together in a separate bowl the night before when your doing the oats and buttermilk.
