4 - 5 lb. Beef Brisket, flat - leave fat on
Brisket Rub (see misc.recipes)

Rub brisket all over with brisket rub. Wrap in saran wrap for 2 - 24 hours. Set up grill for indirect heat (230º - 275º). Before putting meat on the grill, cut a notch in one corner of he brisket against the grain to use as a reference point for slicing after it is done. Put brisket on grill fat side up. Grill for 3 - 4 hours. Turn over and grill for another 1 - 2 hours. turn over again and cook another 1 - 2 hours until internal temperature reaches 200º. Pull off of grill and let rest for 15 minutes. Slice thin against the grain. Serve on hamburger buns.
