Vegetable oil
1 lb. ground chicken
1 medium onion, chopped
1 medium green peper, chopped
1 fresh jalapeno peppers, seeded and chopped
1 poblano pepper, seared to remove skin, seeded and
chopped
1 28.5 oz. can diced tomatoes
1 15.5 oz. can white (or red) kidney beans, drained
1 8 oz. can tomato sauce
1 T. chili powder
1tsp. salt
1 tsp. dried oregano
1 tsp. ground cumin
1/4 tsp. ground red pepper
Grated cheese (cheddar or Monterrey Jack)

Directions:

Heat oli in large sauce pan over medium high heat.

Cook chicken, onion and bell pepper until chicken is no longer
pink and onion is crisp-tender, stirring frequently to break up
chicken.

Stir in jalapeno peppers, poblano, tomatoes with juice, beans, tomato
sauce, chili powder, salt, oregano, cumin and red peper

Bring to a boil over high heat.

Reduce heat to medium-low and simmer, uncovered, 45
minutes.
