3 lbs yellow squash
1/2 cup chopped Vidalia or sweet snions
1 cup crushed Ritz crackers
2 eggs
1 Tbsp sugar
Salt/Pepper to taste
1 stick of real butter

Directions:
Directions:
Wash, cube and boil squash. Drain thoroughly, then mash. Preheat oven to 350º.
In separate bowl, stir eggs, sugar, salt, pepper, onions, and 3/4 cup Ritz crackers. Melt butter and add 1/2 to egg mixture. Stir egg mixture into mashed squash. Pour into 2 quart dish.
Mix remaining cracker crumbs and remaining melted butter together. Sprinkle over squash. Bake for 20 minutes.
