Outstanding Potato Soup Recipe

4 tbsp. bacon drippings or shortening
4 cups peeled raw potatoes, cubed
1/2 cup chopped parsley
1 cup minced onion
1 bay leaf
1 1/2 tsp. salt
1/2 tsp. pepper
5 cup (large can) Chicken stock
2 cups half & half
4 tbsp. flour
1 cup grated raw carrots

Melt shortening and saute potatoes, parsley, onion, bay leaf, salt, and pepper over medium heat.
Then cook covered 15 - 20 minutes over low heat.
Add chicken stock and cook 15 minutes.
Mix half & half with flour and stir into soup.
Keep stirring so no lumps form.
Simmer soup for at least 30 minutes.
Put grated carrots in and cook 5 more minutes.
