½ c corn meal
1 c boiling water
½ tsp salt
1 ½ c milk
1 Tbsp oil
1 sm onion, minced
1-2 c cooked meat of choice (chicken or beef)
1 ½ c canned tomatoes, diced

Directions:
Directions:
Stir corn meal and salt into boiling water in top of double broiler. Cook, stirring, until mixture begins to thicken. Add milk. Place over hot water, cover and cook for 30 minutes. Cook onions slowly in oil until tender. Add meat & tomatoes. Salt & pepper to taste. Line bottom & sides of a greased shallow baking dish with half of the corn meal mixture. Place meat mixture on top and cover with remaining half of corn meal mixture. Bake at 350° for 45 minutes.
