8 cups milk (can use half milk and half water)
1 1/2 cups long cooking rice (not instant)
1/2 cup sugar
16 oz carton cool whip (or real whipped cream)
2 tsps. vanilla
nutmeg (optional) to taste
cinnamon (optional) to taste

Directions:
Directions:
In a very large heavy saucepan combine the milk, rice and sugar. Bring to a boil over medium high heat. Cover and boil over medium heat about 24-30 minutes, until rice is tender, stirring occasionally. Remove from heat and cool. Add 1 carton cool whip and vanilla, nutmeg and cinnamon.

My mom makes this on New Year's Day and hides an almond in one of the bowls of rice pudding. Whoever finds the almond will have good luck in the New Year to come.
