1 meaty ham bone (with broth from a cured ham)
2 cans tomatoes (16 oz) chopped, with juice
2 qt. water
1 bay leave
3 large cloves garlic, chopped
1/2 tsp black pepper
1 medium onion, chopped
1 1/2 cup okra, sliced (fresh or frozen)
2 carrots, sliced
1/2 cup uncooked elbow macaroni
6 medium potatoes, peeled and cubed
(you can substitute any vegetables with your favorites)

Directions:
Place ham bone, tomatoes and water in a large soup pot. Bring to a boil, skimming off any foam. Add seasonings, garlic and bay leaf. Cover and cook over low heat for 1 ½ hours (ham should be about to fall off the bone). Remove bone and remove the meat, chop and return meat to pot. Discard the bay leaf. Add broth, onions, carrots and okra. Simmer 15 minutes. Add macaroni and potatoes, cook for 20 minutes or until potatoes are tender.
