1 large sweet yellow onion
1 cup buttermilk
¼ tsp cayenne pepper
1 cup flour, divided
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
1 teaspoon granulated garlic
6 oz. beer, room temperature
2 cups canola oil

Cut onion in ½ inch slices. Separate into rings and soak in buttermilk mixed with cayenne pepper (for 1 hour or so).

Mix ½ cup flour, salt, pepper, seasonings and set aside. In another bowl mix beer and remaining flour, mixing thoroughly.

Heat oil to 350 degrees. Remove onion rings from buttermilk and shake off excess. Dredge in flour then dip in beer batter. Fry in oil (do not crowd the onion rings in the oil). Turn and remove when golden brown. Drain on paper towels.
