6 small zucchini, coarsely grated
3 eggs
5 scallions with tops, chopped
1/2 cup chopped fresh dill
1/2 cup chopped fresh parsley
1 cup grated gruyer cheese
1 1/2 cups flour
4 Tbs butter
10 black olives (optional)
salt, pepper, dash of cayenne to taste

Directions:
Directions:
Coarsely grate zucchini into a large bowl. Add eggs, scallions, herbs and both cheeses and mix well. Add seasonings.

Grease a 9x9 dish with 2 tablespoons of the butter. Pour the mixture into the pan, decorate with the olives and dot with the remaining butter, Bake at 350º for 45-55 minutes until well browned.
