4 chicken leg quarters, skin on
1 box Stove Top stuffing
2 zucchini, grated
1 cup grated Swiss cheese
1/2 stick butter
2 Tbsp flour
1 cup milk

Directions:
Directions:
Prepare the stuffing mix according to package directions, and set aside to cool. Mix together the cooled stuffing, the shredded zucchini, and 3/4 of the Swiss cheese. Using your fingers, loosen the skin on the leg quarters. Place the zucchini mixture under the skin, stuffing as much as you can under the thighs and the drumsticks. Place the chicken on a sheet pan and bake for 30-40 minutes in a 350º oven. While the chicken is cooking, melt the butter in a small sauce pan. Add the flour, to make a roux. Add milk and simmer to thicken. Add the remaining 1/4 cup cheese. To serve, place 1 leg quarter on each plate and nap with sauce.
