30 chicken wings (approx. 5 lbs.)
1/4 c. all purpose flour
1 tsp. salt
6 tbsp. Louisiana Hot Sauce (not Tabasco)
vegetable oil
6 tbsp. butter
1/2 tsp. black pepper

Directions:
Directions:
Dredge wings in flour, salt and pepper mixture. Heat vegetable oil in heavy skillet to 350º and fry wings until golden brown. Drain well. In a small sauce pan, melt butter and stir in hot sauce. Pour over chicken wings, cover and shake until well coated (a gallon ziplock bag or air tight container works well). Place on a serving platter with celery and carrot sticks. Serve with bleu cheese or ranch dressing.
