4 loin pork chops (1 to 1 1/2 inches thick)
salt and pepper
paprika
2 tbsp water
5 tbsp sugar
1 1/2 tsp cornstarch
1/4 tsp salt
1/4 tsp cinnamon
10 whole cloves
2 tsp grated orange rind
1/2 cup orange juice
4 orange slices

Trim bits of fat from chops and put in skillet over low heat. Let fat fry until there is enough grease to well cover the skillet. While fat is cooking, generously sprinkle both sides of chops with salt, pepper and paprika - the paprika adds a rich brown color when cooked. Remove fat from skillet and arrange chops in the skillet, brown well on both sides over medium heat about 14 to 20 minutes. After browning turn heat to low. Add 2 tbsp of water and cover chops tightly. Let cook on low heat for 45 minutes to 1 hour, turning several times as they cook. About 20 minutes before chops are done, in a separate pot, cook sugar, cornstarch, salt, cinnamon, cloves, grated orange rind, and orange juice, stirring till thickened and clear. Remove from heat. Add four thin orange slices, cut in halves. Cover pot and let sit until chops are done. Remove chops to warm platter and spoon sauce over each chop.

This recipe may sound like a lot of trouble, but very easy and different. It is one of the family favorites - especially daddy.
