2 c. water
1c. rice
1/2 tsp. salt
3 tbsp. canola oil
3 chicken breasts
1/4 package Publix's frozen Seasoning Blend
1 c. finely chopped cooked broccoli florets
garlic powder
1 c. grated cheddar cheese
salt and pepper to taste.

Preheat oven to 350º F. Boil water with salt, add rice, cover tightly and reduce heat to low and cook for 20 minutes. Meanwhile cut chicken into bite-sized pieces. Heat oil in a heavy skillet over med-high heat and cook chicken, in 3 batches, until no longer pink. Set aside, but keep warm. Saute Seasoning Blend in same skillet until onion is clear and soft. Add cooked broccoli and cook until heated through. In a big bowl mix hot rice, cooked chicken, broccoli and 1/2 the cheese together. Place in a casserole dish, sprinkle with remaining cheese. Bake for 20 minutes at 350º F.
