3 T softened butter
1 tsp mustard
3 T brown sugar
2 1/2 T flour
1/2 tsp salt
1/2 cup chopped green pepper
1/12 tsp minced onion
1 cup milk
1 can sliced pineapple, well drained; save juice
1 cup pineapple juice; add water if not 1 cup
1 1/3 cup cooked rice
ham slices about 1/4" thick

Directions:
Directions:
Combine butter, brown sugar & mustard and spread in bottom of greased baking dish. Place in 400º oven until butter is melted and blended with sugar. Top with drained pineapple slices and return to oven for a few minutes. Meanwhile, mix
remaining ingredients except ham together in sauce pan. Bring to boil, reduce heat and cover for 5 min. Stir often. Add to cooked rice; set aside. Top the pineapple slices with the ham slices. Spread rice mixture over ham slices. Cover and bake about 10 min. Cool for 5 min. Invert on serving dish.

This dish is pretty served as described. I found this on the label of the pineapple can when we lived in Maine & Sherri was a baby. I lost it once and found it again on internet.
