2 T butter
2 T flour
2 c milk
1 c shredded cheddar or american cheese
1/2 to 1 1/2 tsp minced onion
1/4 tsp dry mustard
2 c turkey, cut into small pieces
1 to 2 15oz cans skinned potatoes, chopped
3 c frozen mixed veggies
1 tsp to 2 T chicken bullion
1/8 to 1 tsp pepper

Melt butter, add flour and cook 1 minute, until makes paste. Add milk and cheese, cook 5-6 min stirring constantly. Add remaining ingredients and simmer 12-15min. Stir to keep from scorching, or until peas and carrots are tender.
