3 c. vanilla ice cream
2 eggs, beaten
1/2 t. vanilla
4 1/2 c. sweetened cornflakes or Rice Krispies, crushed
1 t. cinnamon
Oil for deep frying

Directions:
Directions:
Place six 1/2 c. scoops of ice cream in a small pan and freeze for 1 hr. Combine eggs and vanilla in a small bowl. In a different bowl, mix the crushed cereal and cinnamon. Dip each ice cream ball in the egg mixture and then roll in the cereal mixture. Return ice cream balls to freezer for 1 hr. or until firm. Dip in the egg and then the cereal mixture again, and freeze for a few hours. Fry the ice cream balls (1 or 2 at a time) in hot oil at 350º, for 15 seconds or until golden brown. Drain on paper towel for a few seconds and serve immediately with ice cream toppings and whip cream.
