2 c sugar
1 1/2 c oil
4 eggs
3 c grated carrots
2 1/4 c sifted flour
1/2 tsp salt
2 tsp soda
2 tsp cinnamon
1/2 c nuts
Frosting:
1 - 8 oz. pkg. cream cheese
1/4 stick margarine
2 tsp vanilla
1 pkg confectioners sugar or enough to spread

Directions:
Directions:
Combine eggs, sugar, and oil. Beat at medium speed for 2 mins. Sift dry ingredients. Add to oil mixture and beat at low speed for 1 min. Add carrots. Spread in 13 x 9-1/2 x 2 greased and floured pan. Bake 300º for 1 hour.

For frosting, mix together cream cheese and margarine (softened). Add vanilla and confectioners sugar.

Love this recipe!! Moist and delish. Store in refrigerator and it gets more moist next day.
